Muffin Compares to these Recipes!

THE BATTLE OF THE BANANA MUFFINS

Coach Henry vs. Coach Jade

Okay, not quite.  If you set these two muffins up in a blind taste test, Henry would deffffinitely win....but that's because his muffin is a traditional recipe.  This means all the sugar, butter, eggs and flour are fair game.  He had a bunch of bananas 🍌 and zero "cares" and whipped these up one day.  I'll be honest, I ate two of them and never looked back.  WOW THEY'RE GOOD!  

Coach Jade took a healthier approach and went for a skinny muffin recipe.  She wanted to give all of our Challenge members a treat on Valentine's Day because she ❤️'s them, and these are super macro friendly!  

We wanted to give you both recipes, because who knows what you're in the mood for.  Maybe you don't care about the macros and are looking for a killer nanner muffin...or maybe you're counting every grain of rice (guilty here) and need something that better fits your macros.

Either way, you're in the right place!

Skinny Banana Chocolate Chip Muffin

Notes from Coach Jade:

  • She subbed almond flour for whole wheat flour.  This gave it a bit of a nuttier flavor!
  • We all love peanut butter...and Jade is no exception.  She added some PB2 to the recipe to upgrade it to a Peanut Butter Banana Chocolate Chip Muffin...aka she made it that much better.
  • Note:  PB2 is a brand of powdered peanut butter that is super macro friendly.  If you are someone who is watching your fat intake, this is a super good substitute for regular peanut butter.  For 2 tablespoons it has roughly 1g Fat, 5g Protein, and 5 Carbs.  Peanut Butter&Co and Just Great Stuff are two other brands of powdered peanut butters that I highly recommend!
  • One option that Coach Jade did not take is adding zucchini.  However, she does say that you can easily grate up a zucchini and add it in to the mix!  This will moisten the muffins and also sneak in some veggies into your day -- and you won't even be able to taste them!
  • Don't forget that you can always sub sugar free chocolate chips or dark chocolate chips if you want.  I also would recommend cinnamon chips.  I think they go great in banana muffins!!

When I asked Coach Henry for notes on these muffins he said, "I just made the recipe".
Thanks, Henry.  That makes for a stellar blog post.
After more prodding he had one thing to say:

  • If you add too much butter when making the crumb topping, it will not be a crumb and will be a liquid...which is not what you want.  So add a small bit of butter at a time to make sure the topping ends up how you want it.
  • I also want to point out you could easily add oats to the crumb topping and that would elevate it's crispiness.  If you do this, I would recommend cooking the muffins first and then towards the end throw the topping on the muffins and broil them until the oats have a nice golden crisp.  That's what I do with my julienned baked apple recipe and it is delicious!  (P.S. I will definitely be posting that recipe soon for you all).
  • Oh!  My one complaint I had about the two muffins of Henry's I ate is that there were no chocolate chips.  It is my firm believe that everything is better with chocolate...sorry Henry 😉
